| admin | Hi this is an aga recipe but can be done in a normal oven equally as well Beef Wellington Feeds 6 people 2 oz butter 2lb beef fillet 2 large onions sliced 4oz mushrooms sliced salt and pepper 14oz frozen pastry (I tend to use shortcrust) egg for glazing Melt butter in roasting tin. Trim fat. Roll in butter in tin. Put in top of oven for 20 minutes turning once browned both sides. This is to sear the meat so the hotter the better. Lift out of tin to cool completely. Add sliced onions to tin and mix in the juices. Stir until golden Add mushrooms and cook for 2 minutes in oven ( I do on hob) Take out of oven. Season the onion/mushroom mix. Leave to cool. Roll out pastry to a rectangle to the length of the fillet plus 4 inches to wrap around the ends; and width the circumference of the fillet. Put half mushrom mix lengthwise in the middle and put the fillet on top flat side upmost. Season well Cut square out at each corner (so when folded up will not create a big thick wadge) Fold the pastry around the meat. Turn over and put on baking tray or tin. Brush liberally with beaten egg. Decorate top with the square cut outs in the shape of leaves etc. Chill in fridge for upto 24 hours. To cook put on floor of oven (hot temperature) for 25-30 minutes until pale and gold. Make up gravy with the remainder of the mushroom/onion mix adding red wine - simmer If you get good fillet then don't be tempted to leave it in the oven too long as fillet should melt and not be overcooked. This recipe is very basic but you don't need lots of herbs and spices or other stuff to hinder the meat. | 0.00 | 0.00 | |
